I don’t know how to cook like a normal person. I couldn’t make just one chicken pot pie even if I tried. I hate measuring. I hate tons of ingredients. I am a dump and go kind of girl, which lead me to this recipe. If you’re going to make one pot pie, you might as well make six. Freeze ahead meals just make life easier. Here’s how I made six chicken pot pies for $14.29 using all Aldi products.

Your List:

  • 6 Refrigerated Pie Crusts (I got mine on sale for $0.50, usually $1.50)
  • 6 Cans Cream of Chicken Soup ($0.50)
  • 1 Cup Chicken Broth ($0.33, $1.35 for the whole box)
  • 3 Packs Frozen Mixed Vegetables ($0.79)
  • 1 Pack Potato Puffs ($1.49)
  • 2 Chicken Breasts ($4.10, $8.20 for full family pack)

Instructions:

  • Add 1/2 cup chicken broth to instant pot, place chicken breasts on trivet, sprinkle with 1 TBS salt, 1/2 TBS pepeper, 1/2 TBS garlic powder, and 1/2 TBS onion powder -OR- Whatever seasoning you like. Season the way the lord tells you.
  • Cook on high pressure for 15 minutes. Quick Release.
  • Keep broth that is in the instant pot and shred chicken.
  • In a LARGE bowl or pot (I use a 12 quart stock pot) add instant pot broth, shredded chicken, soup, veggies, tots, and an additional 1/2 cup chicken broth.
  • Mix well.
  • Line 6 disposable pie tins with pie crust.
  • Add approximately 2.5 cups of filling to each tin.
  • Cover with remaining pie crusts. Pinch together edges of top and bottom crust. Cut a steam vent into center of crust.
  • Bake one at 425 degrees for 40 minutes.
  • Cover remaining pies with aluminum foil and freeze. Pies will need to thaw in refrigerator overnight before baking.

I do not get fussy about the appearance of my freeze ahead pies. They may not be the prettiest girls in the room, but they’ll get your belly full.

I was actually short one pie crust when I made this recipe. No worries though. If you have any remaining filling or you just aren’t into pie assembly that day, you can freeze your filling in gallon bags!

I have to say I am feeling pretty accomplished having completed 6 dinners for less than $15. Aldi, I love you!
