Did anyone else buy pandemic chickens, or are you normal? Well I did and I am now up to my eyeballs in eggs. The search for more egg friendly recipes brought breakfast meatballs into my life. I ain’t mad about it either. Looking for a recipe for make your mornings bite sized and kid friendly? I got you.
What you’ll need:
- 2 lbs sausage (Aldi – $3.30)
- 6 eggs scrambled and chopped (Pandemic Chickens – Free)
- 6 pancakes chopped (Aldi – $0.43)
- 1/2 cup maple syrup (Aldi -$0.24)
- Salt and pepper
Directions:
- Place sausage, eggs, pancakes, and maple syrup in a bowl and sprinkle with salt and pepper. Mix thoroughly. I use my Kitchen Aid mixer to do so.
- Form into meatballs. I used my cookie scoop to make the process easier.
- Place onto a cookie sheet or mini muffin tin. Bake at 375 for 20 minutes.
- Serve with additional maple syrup if desired.
This recipe made approximately 60 meatballs. That’s more than we can eat in one setting so I froze the rest. I laid the meatballs out on a cookie sheet, placed it in the freezer, and flash froze the meatballs before placing them into a freezer bag. This will prevent them from sticking together. To prepare them after freezing you and use your microwave or air fryer.
In total I spend $3.97 for 60 breakfast meatballs. A meal I was able to serve immediately and freeze for later for less than $4.00? Yes, please!
I will definitely have to try these! Sounds perfect for busy mornings!
The next time I make them I’m going to use the pancakes from the freezer section at Aldi to make it even easier!
