Guess who’s back on the carbs? This girl! The best part about carbs (besides the bread, the pasta, and the sweets) are they are the bones of cheap and easy meals… and that’s why I’m here, folks! Without further ado I bring you Crazy Easy Instant Pot Crack Chicken Pasta!

What You’ll Need:

  • 2 lbs chicken diced ($4.07)
  • 1 Box Chicken Broth ($1.25)
  • 1 Box Rotini Pasta ($0.82)
  • 6 sliced bacon crumbed -OR- 2 small bags bacon bits ($2.75); I would have used bacon bits if I had them.
  • 1 bottle Ranch Dressing ($0.92)
  • 1 bag frozen mixed vegetables ($0.85)
  • 8 oz bag shredded cheese for topping ($2.18); I used some hand shredded block cheese because it was on hand.

Directions:

  • Add entire box of pasta to Instant Pot
  • Add entire 32 oz box of chicken broth
  • Smoosh the pasta down until all pasta is covered and is as submerged as possible
  • Cover pasta with diced chicken. Season as desired (salt, pepper, minced onion, garlic powder)
  • Cook on high pressure for 15 minutes
  • Quick release
  • Add entire bottle of ranch dressing, entire bag of frozen mixed vegetables, and bacon
  • Stir
  • Change Instant Pot setting from stay warm to sauté and stir until frozen vegetables have warmed to serving temperature
  • Top with shredded cheese

This is such an easy recipe…

and is so so so good! Coming in at $12.84 this will feed an army. My husband and I ate this for dinner, had leftovers for lunch and then some. It’s a good one, yall!
