Do you have an instant pot? Do you have a freezer? Do you love tacos? This big batch freeze ahead recipe is for you! It’s honestly so easy I feel silly making a whole ass blog post about it, yet here we are.

Don’t let the sticker price fool you. I bought the chicken in bulk at Sam’s for $1.89/lb.

What you’ll need (for a six quart Instant Pot):

  • Approximately 7 lbs boneless chicken ($13.23 – Sam’s)
  • 7 packs taco seasoning ($2.31 – Aldi)
  • 7 packs ranch seasoning ($3.01 – Aldi)
  • 3 gallon freezer bags

Directions:

  • Place chicken over trivet in Instant Pot.
  • Add one cup water.
  • Cook on high pressure for 55 minutes. Add time if chicken is frozen or partially frozen.
  • Quick release pressure.
  • Shred chicken. I use my kitchen aid for this.
  • Return to Instant Pot and follow package instructions on the back of the taco seasoning packet.
  • Add 4.5 cups of water, all seasoning packets, and stir until evenly mixed.
  • Switch Instant Pot to saute mode. Bring to a boil and stir.
  • Let chicken cool. Place approximately five cups of chicken per bag.
  • Label and freeze.

To Serve:

  • Place into Instant Pot on slow cook mode either straight from the freezer or thawed overnight.
  • Cook at whatever pace you wish, knowing that placing in the pot from frozen will take longer.
  • Serve with fixings of your choice.

In total I got…

3 large freeze ahead ranch chicken taco dinners for $18.55. There is so much taco per bag my family will easily get a second day whether that be lunch or dinner from this meal prep. That comes to $3.09 a meal which is pretty freakin’ great if you ask me! Make sure to buy your fixings at Aldi, folks. It does add up!
