So this is actually a recipe of the Big Mountain Daddy himself, Rob Frazer. It’s always better when he makes it. He just has that touch when it comes to all things deer. It may not be ✨as✨ good when you or I make it, but it will still be pretty damn good nonetheless.
What you need:
- 2 lbs venison cubed (the woods – free) / (lean stew meat as deer alternative – Walmart – $11.96)
- 1 cup onion diced (red onion – Walmart – $0.94)
- 1 cup carrot diced (baby carrots – Aldi – $0.48)
- 1 bell pepper diced (stoplight peppers – Aldi – $0.96)
- 1 bottle italian dressing (Walmart – $1.33)
- 3 eggs (pandemic hens – free) / (Walmart – $0.54)
- 2 cups rice (jasmine – Sams – $0.64)
Feel free to change up what type of onion, pepper, and rice you use. I used what was on hand in my house.
What to do:
- Add rice to Instant Pot with 2 cups of water and chunk of butter. Use rice setting to cook on high pressure for 15 minutes. Quick release pressure. Stir rice. Keep on warm until needed.
- Put venison in pot. Cover with water. Cook until boiled. Remove when weird froth is formed. See below.
- Crack eggs into microwave safe bowl. Add milk, salt, and pepper to make scrambled egg mixture. Microwave until eggs are no longer liquid. Microwave times will vary. Start at 2 minutes and go from there. Crumbled eggs and set aside.
- Strain deer. Add to pan with pepper, carrot, and onion. Cover with 1/2 bottle italian dressing. Cook on medium-high heat until almost all dressing has cooked up. This can take 20-30 minutes. Add in eggs in the last 10 minutes of cooking.
- Serve with rice. Drizzle with remaining italian dressing. Season with salt and pepper.
What it cost:
I made this meal for a total of $4.35! It make approximately 6 servings coming in at $0.73 per serving! In this day and age I’m not mad about that AT ALL.
If you don’t have freezers full of deer meat and a coop of pandemic hens like I do, it will bump your cost up to $16.85 😢. That’s no bueno. That would bring us to $2.80 a serving. I don’t love that but this recipe will be delicious despite inflated meat prices. You could consider using only 1 lb of meat and it would still be as good in my opinion.
