If you’re looking for a recipe to dress up cheaper cuts of meat this is a great one! The Instant Pot makes these chicken thighs so tender. I can’t believe I spent years only buying chicken breasts when these thighs have been out there the whole time! I serve mine over basmati rice. So cheap. So easy. So tasty!
You will need:
- 1 pack bone in chicken thighs (Aldi – $3.62)
- 1/2 cup ketchup (Aldi – $0.16)
- 1/2 cup soy sauce (Great Value -$0.76)
- 1/2 cup honey (Aldi – $1.95)
- 1/2 cup minced garlic (Aldi – $0.89)
- 1 cup basmati rice (Sam’s – $0.44)
- 1/8 cup cornstarch mixed with 1/4 cup water to thicken sauce
- Note that the measurements in the picture above differs from the list. My original recipe made WAY too much sauce so I scaled it down.
Instructions:
- Prepare rice ahead of time with the method of you choosing. I either use my freeze ahead rice or use the rice setting on my Instant Pot.
- Mix ketchup, soy, honey, and garlic together in a mixing bowl. Set aside.
- Place chicken thighs in Instant Pot . Pour mixture over top of chicken thighs.
- Cook on high pressure for 25 minutes. Quick release.
- Place chicken thighs into air fryer in a single layer. Cook at 400 degrees for approximately 5 minutes.
- Mix cornstarch and water together. Stir into the remaining mixture in the Instant Pot to thicken honey garlic sauce.
- Place chicken thighs over rice. Cover with sauce. Enjoy.
In total this recipe cost me $7.42 or about $1.85 a serving based off of two adults with enough for next day left overs. It’s more than a few pennies, but the honey which jacked the price up is so worth it! Honestly though, feeding a family of four for $7.32 is winning in my book.
