This recipe was inspired by my very recent first time eating Thai food. My version is not authentic and pales in comparison to the real deal… but if you want to tinker in your kitchen and can settle for good, but not as good as the real thing, I have a recipe for you!

You will need:

  • 2 chicken breasts cubed (Aldi – $4.10)
  • 2 onions chopped (Aldi – $0.52)
  • 2 cups basmati rice (Sam’s – $0.44)
  • 6 eggs scrambled (Pandemic Hens – $0.00)
  • 1 cup Asian dressing (Aldi – $0.94)
  • 1/2 cup soy sauce (Aldi – $0.34)
  • 1 cup raisins (Aldi – $1.15)
  • 1 cup cashews (Aldi – $2.39)
  • 1 can pineapple (Aldi – $0.89)
  • salt, pepper, garlic powder for seasoning

Directions:

  • Cook chicken breast in instant pot. Place on trivet. Pour Asian dressing, soy sauce, and approximately 1/4 cup water over chicken. Sprinkle salt, pepper, and garlic powder over chicken. Cook on high pressure for 25 minutes. Remove chicken, cube, and set aside. Reserve one cup of liquid remaining in the instant pot to add to rice mixture later.
  • Rinse out instant pot. Add rice with 2 1/2 cups of water and a splash of vegetable oil. Cook on rice setting at high pressure for 15 minutes. Remove rice and set aside.
  • Scramble six eggs. Set aside.
  • Chop two onions. Set aside.
  • Mix rice, chicken, eggs, onion, pineapple, raisins, cashews, and reserved liquid in a large bowl. This is ALOT of food so you will need a big one!
  • Place half of mixture in a gallon freezer bag. Remove as much air as possible, squish flat, and freeze.
  • Place some vegetable oil in a large pan and add remaining mixture. Cook on medium/high heat until rice starts to brown and the onions cook down. Season with salt, pepper, and garlic powder as needed.

This is SO MUCH food its ridiculous. This recipe in total makes 16 servings. For my family that was enough to eat with leftovers and will be again when I cook my freeze ahead. It rang in at $10.77 for two meals or $0.67 a serving if you want to break it down even more. It’s really really good too especially for how little effort I made. It’s that Asian dressing. I could drink it. 😋
