Want to make the easiest, cheapest, most delicious comfort food out there in obscene quantities? Read on, reada! You can of course make this one pot at a time, but it’s not in my personality to do so. Might as well use that ENTIRE Sam’s Club chicken package in one shot. A little extra work on the front end will really pay off for your lazy ass later. 🤣

What You Need (total):

  • 1 pack boneless chicken (Sam’s – $10.09; ignore sticker price – purchased in bulk for $1.89/lb)
  • 4 cartons chicken broth (Aldi – $4.60)
  • 4 cups milk (Aldi – $.50)
  • 2 ranch seasoning packets (Aldi – $.86)
  • 4 cans biscuits (Aldi – $3.96)
  • 1 cup cornstarch (Aldi – $.44)

Directions:

To Freeze:

  • Place entire pack of chicken in Instant Pot with 1/2 cup of water. Sprinkle with salt and pepper.
  • Cook on high pressure for 1 hour. Quick Release.
  • Shred chicken. The quickest, easiest, laziest way for me to do this is to use my Kitchen Aid. If you don’t have a Kitchen Aid you can use forks or hand held shredder.
  • Let chicken cool until it can be comfortably handled.
  • Divide evenly amongst 4 gallon bags. I use a one cup measuring cup to do this.
  • Divide the remaining chicken stock in the pot amongst bags.
  • Remove as much air as possible from bags. Arrange chicken so that it can freeze flat. This takes a little effort and elbow grease.
  • Freeze.

To Prepare:

  • Place one bag Chicken & Dumpling base into Instant Pot. Slow cook until heated. I use the lowest setting and return to pot whenever I’m ready to prepare HOURS later.
  • When ready add 1 box broth to pot.
  • Mix 1 cup milk and 1/4 cup corn starch together. Add to pot. Stir.
  • Quarter and season 1 can of biscuits with 1/2 pack ranch seasoning. Add biscuits and any remaining seasoning to pot.
  • Switch Instant Pot to sauté mode. Gently stir to incorporate biscuits to mix. Avoid heavy stirring if you want biscuits to remain dumpling like. Be mindful of the bottom on the pot as burning can occur in sauté mode.
  • Cook until dumplings are cooked to your liking. Season with salt and pepper. Serve.

Cost Breakdown:

In total FOUR chicken and dumpling meals cost me $20.45. Each freeze ahead bag with items to prepare cost a total of $5.11. My family got about 6 bowls per bag coming in at $.85/bowl. EIGHTFIVE CENTS A BOWL, FOLKS! Ignore me while I shout it from the rooftops. With today’s grocery prices this fulfilling mean at that low price honestly brings a tear to my eye!
